Heat a large pan over medium-high heat; once hot, coat with oil and add in the chicken. Season liberally and cook for 5-7 minutes, stirring occasionally, until chicken is no longer pink.
Once the chicken is done, transfer to a plate and set aside. Using the same pan (if necessary, add in a little more oil), add in the veggies and another third of the sauce. Cook for another 5-7 minutes until the veggies develop some color.
While the veggies are cooking, warm up the tortillas in the oven or toaster oven
Once the veggies are just about finished, add the chicken back into the pan and turn off the heat.
Serve up the tortillas with any toppings calling your name - salsa, guacamole, lime, cilantro, hot sauce
