Scrambled Eggs with Spinach & Mushroom

Take your scrambled eggs to the next level with this vegetarian, protein-packed recipe.

  • Eggs
  • Spinach
  • Mushrooms
  • Oil or Butter


  • 1 part salt
  • 1 part black pepper

Equipment Needed:

  • Pan
  • Stovetop

Step 1: Slice the mushrooms into thin-strips (see instructional videos below)
Step 2: Crack eggs into a bowl and whisk until yolks and whites are combined. Set aside for later
Step 3: Add oil or butter to a pan and heat over medium heat
Step 4: Sautee the mushrooms for 4-5 minutes, until mushrooms start to brown.
Step 5: Add the spinach to the pan with the mushrooms and cook for another 1-2 minutes. Add more oil or butter if necessary.
Step 6: Add the eggs to the pan with spinach and mushroom and cook for 1-2 more minutes, until eggs reach desired consistency. Add more oil or butter, if necessary.
Step 7: Season to taste
