Quinoa with Broccoli, Cauliflower, Mushrooms, & Carrots

This vegetarian meal packs a satisfying, healthy punch and is easy-to-cook. Saute some veggies and mix it in with quinoa and you’re all set.

  • Quinoa
  • Broccoli
  • Cauliflower
  • Carrots
  • Bell Pepper
  • Mushrooms
  • Oil or Butter

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Boil water in a large pot
Step 2: Cook quinoa according to package instructions
Step 3: Dice the broccoli, cauliflower, carrots, bell peppers, and mushrooms into small pieces
Step 4: Add oil or butter to a pan and heat over medium heat
Step 5: Sautee the veggies for 5-10 minutes, until broccoli and cauliflower begin to brown and carrots start to soften up
Step 6: Add the quinoa to the pan with the veggies and stir well
Step 7: Oil and season with:

  • 1 part salt
  • 1 part ginger
  • 1 part garlic powder
  • 1 part onion powder
