Too-Easy-Not-To-Cook Chicken & Veggie Fried Rice

Tough to do your body any better than with this nourishing quinoa dish loaded with sautéed broccoli and cauliflower and lean ground chicken. Pro-tip: cook the chicken first and then cook the broccoli and cauliflower in the same pan so they can absorb all that flavor.

  • quinoa
  • Broccoli
  • Cauliflower
  • Ground chicken
  • Oil or Butter


  • 1 part salt
  • 1 part black pepper

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Cook quinoa according to package instructions
Step 2: Chop broccoli and cauliflower into bite-sized pieces
Step 3: Heat oil or butter in a pan over medium heat
Step 4: Cook ground chicken for 7-10 minutes, stirring occasionally, until no longer pink
Step 5: Remove chicken from the pan, add more oil or butter, and saute broccoli and cauliflower for 5-10 minutes, until they become crispy and golden-brown
Step 6: Add chicken and quinoa into the pan, stir well to combine, season to taste and enjoy!
