Step out of your (taco) shell and cook this simple recipe. Take ground beef, add your fajita style vegetables, layer in cheese and throw on some salsa for an extra kick. Use corn or flour tortillas to hold your taco mix and enjoy!
Start by dicing onion, pepper, and tomato. Rinse and drain beans.
In a large skillet, heat oil over medium heat.
Cook the beef with 1tsp garlic powder, salt and pepper to taste, for about 8-10 minutes, or until done.
Meanwhile, in a separate skillet on medium heat, coat the pan with oil or butter. Toss in red onion, bell pepper, and all the spices, plus a sprinkle of salt and pepper.
Once onions have become translucent, add black beans. Cook for about 3 more minutes.
Check the meat, once fully cooked it is time to assemble the taco!
Take your tortillas and stuff with meat, pepper/onion mix, spinach and diced tomatoes. Top with shredded cheese!
Tips & Tricks
Drape tortilla over the grate in the oven. Allow to bake for a few minutes and now you have a hard taco shell
To bring out the flavor, squeeze a lime or lemon slice on your dish
Use avocado for a creamy healthy topping
For added spice, bring out your favorite hot sauce or salsa
Add a dollop of sour cream as a tangy, refreshing finish. Better yet Greek yogurt for a low calorie, high protein substitute.
Added flare: use fresh cilantro or parsley to garnish
Run canned black beans under water to remove excess salt, which is what companies use as preservative
Use refried beans instead of black beans. Would not need to cook with pepper and onion mix.
Leftover ½ can of beans? Throw in a salad, add to a chili, or mix in with scrambled eggs. Refrigerated once open, they should last about 4 days.
