This Mexican flavor inspired bowl is one of our favorite simple recipes. Beef, rice, vegetables and a bowl load (no pun intended) of flavor. Dinner has never tasted so good!

    • ½ lb ground beef
    • 1 cup white rice
    • ½ can of black beans, drained and rinsed
    • 1 cup spinach
    • 1 bell pepper, diced
    • ½ red onion, diced
    • 1 medium tomato, diced
Seasoning
  • oil or butter
  • ¼ cup shredded mozzarella cheese
  • 2 tsp garlic powder
  • 2 tsp cumin
  • 2 tsp oregano
  • salt + pepper
    • 1 lb ground beef
    • 2 cups white rice
    • 1 can of black beans, drained and rinsed
    • 2 cups spinach
    • 2 bell peppers, diced
    • 1 red onion, diced
    • 2 medium tomatoes, diced

  • 4 tsp garlic powder
  • 4 tsp cumin
  • 2 tsp oregano
  • salt + pepper

Instructions

  1. Begin by cooking the rice. The ratio is 2 cups of water for every 1 cup of rice. Bring a pot of water to a boil, add rice, and turn heat to low. Put on a lid and let simmer for about 15-20 minutes.
  2. Meanwhile, dice the onion, bell pepper, and tomato (scroll down for instructional videos). Rinse and drain beans.
  3. In a large skillet, heat oil over medium heat. Begin to cook the ground beef, onion, and bell pepper.
  4. Once the meat has browned, add black beans and all your spices to the skillet and stir. Cook for about 5-7 more minutes at medium high heat until meat has fully cooked.
  5. Add cooked rice to the large skillet and toss in your spinach. Turn heat to low and allow to it soak up all the flavor while the spinach to cooks down.
  6. For serving, place the mixture in bowl, top with tomatoes, sprinkle with cheese and enjoy!

Tips & Tricks

  • To bring out the flavor even more, squeeze a little fresh lime juice on at the end. For an extra kick, bust out your favorite hot sauce. And to go to the extra mile: use fresh cilantro or parsley to garnish
  • Add sliced avocado or guacamole for a creamy healthy additive, and if you like sour cream, go ahead and a dollop (or better yet, Greek yogurt, for a low-calorie, high-protein option(.
  • Leftover ½ can of beans? Throw in a salad, add to a chili, or mix in with scrambled eggs. Once opened, store covered in the refrigerator, and they should last about 4 days.
  • Run canned black beans under water to remove excess salt, which is what companies use as preservative
  • This recipe is extremely versatile. Add any items hiding in your fridge that need to be eaten. For example, frozen peas, mushrooms, corn.
  • How to tell if rice is cooked: rice should have soaked up all the water/broth, if chewy or hard in center add more water and continue to simmer on low. Rice takes 15-20 minutes on average to cook.
