Lemon-Pepper Salmon with Zucchini & Rice

The lemon brings out the freshness of the salmon and the pepper provides just a bit of a bite. Pair with sauteed zucchini and rice for a simple, healthy, and delicious dinner.

  • salmon
  • rice
  • zucchini
  • oil or butter


  • lemon juice or lemon zest
  • white pepper (black pepper is fine, too)

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Cook rice according to package instructions
Step 2: Oil and season salmon
Step 3: Heat oil or butter in a pan over medium heat
Step 4: Cook salmon skin-side down for 2-3 minutes per side. Reduce heat to low, flip salmon, cover, and cook 5 more minutes.
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate salmon, rice, and zucchini together and serve!
