Ingredients
- ½ lb chicken thighs or breasts
- ½ onion
- 1 bell pepper
- 6 oz mushrooms
- 4 tortillas

- 2 bell peppers
- 12 oz mushrooms
- 8 tortillas

Instructions
- Slice veggies and chicken into thin strips
- Heat a large pan over medium-high heat; once hot, coat with oil and add in the chicken. Season liberally and cook for 5-7 minutes, stirring occasionally, until chicken is no longer pink.
- Once the chicken is done, transfer to a plate and set aside. Using the same pan (if necessary, add in a little more oil), add in the veggies and another third of the sauce. Cook for another 5-7 minutes until the veggies develop some color.
- While the veggies are cooking, warm up the tortillas in the oven or toaster oven
- Once the veggies are just about finished, add the chicken back into the pan and turn off the heat.
- Serve up the tortillas with any toppings calling your name - salsa, guacamole, lime, cilantro, hot sauce
