Step 1: Preheat oven to 425 F
Step 2: Chop the potatoes, brussels sprouts, and carrots into bite-sized pieces (see instructional videos below)
Step 3: Line a baking tray with parchment paper or tinfoil, or grease with butter or oil
Step 4: Oil and season chicken breast
Step 5: Place potatoes and veggies on the baking tray and oil and season. Add chicken to the tray.
Step 6: Bake for 30-40 minutes, until chicken is no longer pink and veggies are golden brown
