Spicy Thai Noodles with Chicken + Veggies

  • 1/4 lb chicken
  • 2 oz egg noodles
  • 1/2 onion
  • 1 bell pepper
  • 2 oz mushrooms
  • soy sauce
  • peanut butter
  • sriracha
  • 1/2 lb chicken
  • 4 oz egg noodles
  • 1 onion
  • 2 bell pepper
  • 4 oz mushrooms
  • soy sauce
  • peanut butter
  • sriracha

Equipment

  • pot
  • pan
  • stovetop

Instructions

  1. Meanwhile, slice the veggies and chicken
  2. Once water is boiling, add in noodles and cook according to package instructions
  3. Heat oil in a large pan, and cook chicken for 5-7 minutes, stirring occasionally, until no longer pink. Once done, remove chicken from pan and set aside
  4. Add veggies to the pan and cook another 5-7 minutes
  5. Add noodles and chicken into the pan with the veggies, and toss with peanut butter, soy sauce, and sriracha

Tips & Tricks

  • If you're in a rush, you can cook the chicken and veggies at the same time in two different pans
  • Combine the ingredients for the sauce separately in a small container and whisk before adding it to the noodles
